Vanilla Pudding                                                                                                                                             

2/3 c. sugar                         3 egg yolks – slightly beaten                                                       

1/3 c. flour                          1 tbsp butter                                                                                     

½ tsp. salt                            1 ½ tsp. vanilla                                                                                  

3 c. milk                                                                                                                                                               

                                                                                                                                                               

Mix sugar, flour, salt in saucepan.  Gradually stir in                                                                          

Milk.  Cook over medium heat, stirring constantly                                                                            

Until mixture thickens and boils.  Boil 1 minute.

Remove from heat and stir in half the hot mixture                                                                          

Into egg yolks.  Blend hot mixtures together and                                                                             

Boil 1 minute more, stirring constantly.  Remove                                                                              

From heat and add butter and vanilla.                                                                    . 

                                                                                                                                                               

For chocolate:

Increase sugar to 1 ½ cups.  Add 3 squares un-

Sweetened chocolate (3 oz) cut up with the milk

Or ½ cup cocoa with the sugar, flour and salt.

 

 

Lemon Fluff                                  

1-14 oz. can 1 ¾ c. evaporated milk – make ice cold

1-4 oz. pack lemon flavored gelatin

1 ¾ c. hot water

½ c. lemon juice

1 c. sugar

2 ½  c. Vanilla Wafer crumbs

                                               

Dissolve gelatin in hot water, then chill until partially set, then whip

until light and fluffy. Add lemon juice and sugar.  Whip chilled milk

and fold into gelatin mixture.  Line bottom of pan with crumbs, pour

Over gelatin mixture.  Top with remaining crumbs.  Chill until firm.
